The Chai wala group owns two restaurants, one in soho (DUM Biryani House) and the the second in Mayfair (Lucknow 49)
I have been hired by this group in order to open the restaurant Lucknow 49 and implement the service and standards for the bar side of the business.
I am now managing the bar operations of both restaurants with the following main activities:
- Creating the menus, calculating costings and negotiating partnerships with suppliers.
- Involved in the recruitment and then training of the new employees behind the bar and on the floor too.
- Running the day to day operation of the businesses with the general manager.
- Creating rotas while respecting costings
- Daily Cash up
